
Peanut Butter Chocolate Chia Pudding

This peanut butter chocolate chia pudding is a rich, make-ahead dessert that combines creamy texture with balanced ingredients. Made with chia seeds, cocoa powder, Greek yogurt, and natural peanut butter, it offers a satisfying option for snacks, breakfast, or healthier desserts while providing fiber, protein, and healthy fats.
Ingredients
3 cups unsweetened soy milk
¾ cup chia seeds
¼ cup Dutch-process cocoa powder, plus extra for dusting
⅛ teaspoon salt
2 tablespoons pure maple syrup, plus 1 teaspoon divided
1½ teaspoons vanilla extract, divided
¾ cup nonfat plain Greek yogurt
⅓ cup smooth natural peanut butter
Method:
- STEP 1: In a large bowl, whisk together the soy milk, chia seeds, cocoa powder, salt, 2 tablespoons maple syrup, and 1 teaspoon vanilla extract until fully combined. Cover and refrigerate for at least 12 hours, or until thickened.
- STEP 2: In a separate bowl, mix the Greek yogurt, peanut butter, remaining maple syrup, and remaining vanilla extract until smooth and creamy. Cover and refrigerate until ready to use.
- STEP 3: Stir the chilled chia pudding mixture and divide evenly into 4 jars or small bowls.
- STEP 4: Spoon the peanut butter mixture evenly over each serving and smooth the top. Dust lightly with extra cocoa powder if desired before serving.

The chia pudding base can be prepared up to 3 days in advance and kept refrigerated for quick breakfasts, snacks, or desserts throughout the week.
