Apple Crisp Cups

Level: Easy - Serves 48 mini cups
These apple crisp cups combine warm cinnamon apples with a buttery oat crumble in a bite-sized dessert that works well for gatherings, snacks, or seasonal treats. Made with rolled oats, fresh apples, and brown sugar, they bring the flavor of a traditional apple crisp into an easy handheld version.
Ingredients
3 large McIntosh apples, peeled, cored, and chopped
¼ cup water
2 tablespoons white sugar
1½ teaspoons ground cinnamon, divided
2 cups all-purpose flour
2 cups rolled oats
1½ cups brown sugar
½ teaspoon ground nutmeg (optional)
1½ cups butter
Method:
- STEP 1: Preheat the oven to 350°F (175°C). Grease four 12-cup mini muffin tins.
- STEP 2: In a medium saucepan, combine the apples, water, white sugar, and ½ teaspoon cinnamon. Simmer over medium-low heat for about 5 minutes, stirring occasionally, until the apples begin to soften. Remove from heat.
- STEP 3: In a large bowl, mix together the flour, oats, brown sugar, remaining cinnamon, and nutmeg. Cut in the butter until the mixture forms coarse crumbs.
- STEP 4: Press about 1 tablespoon of the crumble mixture into each muffin cup, covering the bottom and sides.
- STEP 5: Spoon about 2 teaspoons of apple filling into each cup and top with additional crumble mixture.
- STEP 6: Bake for 15 to 20 minutes, or until the tops are golden brown. Allow to cool slightly before serving.
Recipe Tip
Extra crumble mixture can be refrigerated and used later as a topping for oatmeal, baked fruit, or yogurt parfaits.
