Banana Oat Energy Cookies

Level: Easy - Serves 12
These soft banana oat cookies are a simple way to enjoy a naturally sweet snack without relying on heavily processed ingredients. Made with rolled oats, banana, and cinnamon, they work well as a quick breakfast option, post-workout snack, or healthier dessert for busy weekdays.
Ingredients
2 bananas, mashed
¼ cup milk
1 large egg, beaten
1 teaspoon honey
½ teaspoon vanilla extract
1 cup rolled oats, or as needed
1 teaspoon ground cinnamon
½ teaspoon baking powder
⅛ teaspoon salt
Optional additions: raisins, chopped nuts, coconut flakes, peanut butter, or extra honey drizzle
Method:
- STEP 1: Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- STEP 2: In a medium bowl, mix the mashed bananas, milk, egg, honey, and vanilla extract until smooth and combined.
- STEP 3: Stir in the rolled oats, cinnamon, baking powder, and salt. If the batter feels too thin, add a few extra oats until the mixture thickens slightly.
- STEP 4: Spoon small portions of batter onto the prepared baking sheet, leaving space between each cookie.
- STEP 5: Bake for about 15 minutes, or until the tops look dry and the edges become lightly golden. Let cool slightly before serving.
